Misfits Delivery

We got our second box of fruits and veggies from Misfits Markets on Thursday...

This box contained butternut squash, two beets, cherry tomatoes, a red onion, four lemons, four Gala apples, celery, two mangoes, fingerling potatoes, two oranges, collards, and a cucumber.


I hadn't had beets in many, many years and hubby hasn't tried them since childhood. We both had them boiled and we are definitely not fans of the pretty beet. I looked for some recipes online and it seemed like the most popular way to prepare them was to roast them. So, I peeled them, cut them up, drizzled some olive oil over them, sprinkled some salt and pepper on top and popped them in the oven.  And they were not bad... still not my favorite vegetable but I wouldn't mind eating them once in a while. Surprisingly, hubby agreed... not his favorite but they weren't awful and he would eat them again.  Does anyone have a favorite recipe for beets that they would share? 
You know... in  case Misfits sends us more beets!


We had some strawberries left over from a special dessert I made for dinner at our son's house and a couple of bananas. We added a couple of Misfits sliced apples to those, melted some chocolate chips and viola! A yummy snack.


I'm not sure what I'm going to do with the collards. I remember that my grandfather used to boil them (goodness, did they boil everything?) and then shake some vinegar on them and sprinkle them with salt and pepper. Yuck!  I am thinking that I might chop them up and freeze them to use in soup next fall. I'll check online to see if there are any more interesting ways to serve them.
